Step into Northcote’s intimate Cookery School and you will soon feel at home. Whether you have a new-found fondness for cooking or are a culinary whizz, a day in the Northcote Cookery School will inspire you. Have fun and learn new skills as you get stuck into new recipes with tips and new dishes to enjoy at home.

The range of courses available throughout the year is varied. One day courses include dinner party menus, garden to table cooking, courses for meat lovers and new vegetarian and vegan courses for 2020.

One of the most popular is the BBQ course, a day packed with tastings, preparation, and tips to give you confidence at the coals to cook incredibly tasty dishes and sides.

The five-day diploma courses offer a week to immerse yourself in the foodie world, perfecting your skills to produce Northcote quality dishes. With three diploma levels, you can choose the one that is right for you, or as many students do, start with the foundation course, and work your way up.

Head Tutor, Bruno Birkbeck, has many years’ experience working as a chef at well-respected establishments such as The Samling, Hipping Hall, and The Torridon, as well as being part of the Northcote family. This was both at the beginning of his career at the hotel and later as Group Head Chef across Ribble Valley Inns.

Bruno brings high-level kitchen experience as well as the teaching of trainees into the Cookery School, which means attendees learn a mix of simple and Michelin star kitchen skills, as well as unique recipes inspired by Northcote’s own culinary style.

Junior Tutor Emma Lawson’s role draws on her vast experience, which combines general kitchen knowledge with specialist patisserie and chocolate skills. She is leading on these courses. Emma was inducted into the Craft Guild of Chefs Graduate Awards hall of fame 2018 as one of only six talented young chefs to achieve this.

All courses include a 2-course seasonal lunch with accompanying wines chosen by the Sommelier, light breakfast on arrival, cream tea in the afternoon, tea and coffee throughout the day, tastings and the food you have cooked to take home, along with the recipe folder from the day and your own apron to keep.

Pub Classics Course. Bruno and Emma are fantastic teachers. This was the second course I have attended and once again I have enjoyed every minute…You get the benefit of support from Bruno and Emma whilst preparing your food, asking questions along the way, and even tips on how you can change the recipe if necessary, to suit your guests. On top of this you get amazing food for lunch…I am so much more confident with more technical recipes now.
